<strong>Mississippi Mud Cake<\/strong>.\u00a0 This rich and gooey Southern dessert comes in all sorts of variations from cake to pie and is said to resemble the Mississippi River banks.\u00a0 I had my first experience with Mississippi Mud pie when I was in college in Baltimore.\u00a0 One of my best friends and I would go to TGIF&#8217;s for a slice of their ice-cream version (which is sadly no longer on the menu).\u00a0 Maybe some of you have a cherished family version that brings you back to your childhood.\u00a0 With my brother in town today for a convention, I decided to give Mississippi Mud\u00a0a try for our family dinner.\u00a0\u00a0 It was dense, chocolaty, and delicious!<\/p>\n<p style=\"TEXT-ALIGN: center\"><a rel=\"attachment wp-att-5218\" href=\"http:\/\/www.sweetbeadstudio.com\/?attachment_id=5218\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-5218  aligncenter\" title=\"mississippi-mud-cake\" src=\"http:\/\/www.sweetbeadstudio.com\/wp-content\/uploads\/2011\/01\/mississippi-mud-cake.jpg\" alt=\"mississippi-mud-cake\" width=\"515\" height=\"400\" srcset=\"http:\/\/www.sweetbeadstudio.com\/wp-content\/uploads\/2011\/01\/mississippi-mud-cake.jpg 515w, http:\/\/www.sweetbeadstudio.com\/wp-content\/uploads\/2011\/01\/mississippi-mud-cake-150x116.jpg 150w, http:\/\/www.sweetbeadstudio.com\/wp-content\/uploads\/2011\/01\/mississippi-mud-cake-300x233.jpg 300w\" sizes=\"auto, (max-width: 515px) 100vw, 515px\" \/><\/a><\/p>\n<h3 style=\"TEXT-ALIGN: center\">Mississippi Mud Cake<\/h3>\n<p style=\"TEXT-ALIGN: left\">Cake:<\/p>\n<ul>\n<li>\n<div style=\"TEXT-ALIGN: left\">1 c. butter<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">1\/2 c. cocoa<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">2 c. sugar<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">4 large eggs, slightly beaten<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">1 1\/2 c. all purpose flour<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">1 dash salt<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">1 tsp. vanilla extract<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">1 1\/2 c. pecans, optional<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">4 c. mini marshmallows<\/div>\n<\/li>\n<\/ul>\n<p style=\"TEXT-ALIGN: left\">Chocolate frosting:<\/p>\n<ul>\n<li>\n<div style=\"TEXT-ALIGN: left\">1 (16 oz.) package powdered sugar<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">1\/2 c. milk<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">1\/3 c. cocoa<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">1\/4 c. softened butter<\/div>\n<\/li>\n<\/ul>\n<ol>\n<li>\n<div style=\"TEXT-ALIGN: left\">Preheat oven to 350 degrees.\u00a0 Spray a 9&#215;13&#8243; pan with baking spray.<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">Melt the butter in a medium saucepan.\u00a0 Add the cocoa and stir.\u00a0 Remove from the heat.<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">Pour butter mixture in to a mixing bowl and add sugar and eggs.\u00a0 Mix until blended.<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">Add the vanilla.\u00a0 Mix in the flour and salt.\u00a0 Stir in the pecans.<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">Put the batter into the prepared pan and cook for 30-35 minutes or until done.<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">Remove from the oven and sprinkle with the marshmallows.<\/div>\n<\/li>\n<li>\n<div style=\"TEXT-ALIGN: left\">For the frosting:\u00a0 Combine all of the ingredients and mix until smooth.\u00a0 Spread on the cooled cake.<\/div>\n<\/li>\n<\/ol>\n<p style=\"TEXT-ALIGN: center\"><strong>Enjoy!<\/strong>\u00a0<\/p>\n<p style=\"text-align: left;\"><a rel=\"attachment wp-att-5219\" href=\"http:\/\/www.sweetbeadstudio.com\/?attachment_id=5219\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-5219\" title=\"siggie7\" src=\"http:\/\/www.sweetbeadstudio.com\/wp-content\/uploads\/2011\/01\/siggie7.png\" alt=\"siggie7\" width=\"138\" height=\"75\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Mondays can be tough.\u00a0 Especially in the dead of winter.\u00a0 I have just the thing, though, \u00a0to warm you from the inside out &#8211;
